Rye bread, or black bread, is a darker type of bread, used as a substitute for white bread, especially in the German-speaking regions. This bread is kneaded using rye flour instead of white flour, since rye was more resistant to the cold climates typical of mountain villages, but also to aridity. Rye is a cereal with remarkable nutritional properties: it contains carbohydrates, proteins, mineral salts (iron, calcium, phosphorus), vitamins (group B, e) and is rich in fiber and lysine, an essential amino acid deficient in other cereals. The wealth of fiber makes it a useful food for diets aimed at reducing body weight, in fact it is less caloric than other cereals.
