In Hiromi's laboratory 4 Japanese pastry chefs move in harmony, safety and professionalism and, without entrusting too many activities to the machines, let the hands and experience work with the raw materials. In the laboratory, Japanese and Western traditions meet. Hiromi Cake's desserts are divided into two broad categories: Wagashi, traditional Japanese sweets, and Yougashi, western sweets reinterpreted in Japanese style. The menu is always evolving, respecting the times of nature and out of love for the flavors that the earth offers us in every season.
