The bread of the Santi Sebastiano e Valentino oven contains exclusively organic flour of ancient grains, milled with stone. The choice is to use only flour from grains of old varieties, native and from suitable territories, favoring the baking with the mother yeast and the German fermentations.

Available variants :

  • Hazelnuts and Raisins - soft wheat flour 0, coconut spelled, whole rye, raisins, cinnamon, brown sugar, sourdough, bioreal yeast, whole sea salt, hazelnuts. Weight : ca. 350gr
  • Many cereals - soft wheat flour 0, wholemeal coconut spelled,
    whole rye, durum wheat tumbler, sourdough, whole sea salt. Weight : ca. 700gr
  • Many Seeds - 0 soft wheat flour, dicocco spelled, whole rye, poppy seeds, sesame, flax, pumpkin, sunflower, sourdough, whole sea salt. Weight : ca. 700gr
  • Wholemeal rye - wholemeal rye, rye sourdough, anise, cumin, wholemeal sea salt. Weight : ca. 750gr
  • Tumminia - 100% whole tumminia, sesame seeds, mother yeast, whole sea salt. Weight : ca. 850gr
In this restaurant, only rigorously organic high-quality flours selected from the most important producers are used; mother yeast and German fermentations for many types of bread; the flour grinding, in the final stages, is done in a mill inside the room. They work continuously to create an innovative laboratory, in which to experiment with new blends of flours and to bake breads that meet every need.
