The laboratory is the beating heart of the company, where the individual elements or ingredients, through the combination, mixing, transformation take the concreteness of the finished product. Here the day starts at three in the morning with our leaveners who begin to bake the brioches. The work continues with the production of shortbreads, miniature pastries and our cakes, chocolates and pralines. Every day we experience the relationship between taste and culture and how it is influenced not only by the taste buds per se but also by aesthetic, social, economic and cultural variables; variables whose essence is notoriously changeable.
