Amatriciana Pasta Kit
The Kit includes:
-500g pasta box mezze maniche Verrigni
-300g Guanciale Stagionato (Italian bacon)
-200g pecorino Romano DOP buccia nera cheese
-500g passata pomodoro Ursini - Tomato sauce
-8g black pepper grounded
- 1-Preheat some olive oil in a large pan over medium heat. Add the guanciale ( cut in cubes approx 1cm) and let it cook until crispy. Then add the tomato sauce and black pepper. Reduce heat to low and gently simmer, stirring occasionally until flavours melt, 40minutes.
2-Bring a large pot of water to boil, season with salt, add pasta and cook. Stirring occasionally until 1 minute before al dente. Drain, reserving a bit of pasta water.
3-Transfer the sauce in a large pan over medium high heat. Add pasta and toss to coat. Add some pasta water if sauce seems dry. Divide the pasta in four dishes and grate on top some pecorino cheese.
